When I start the truck with the A/C set to cold, everything works fine, I can adjust the temperature control with no problem. If I leave it on hot, anything to the right of the middle setting, when I turn the truck back on it is stuck on hot. no matter what I do to the controls, all I get is maximum heat, which is really inconvenient when it’s 80 degrees outside.
I’m pretty handy, but I can’t find an answer to this solution anywhere.

That sounds like a classic case of the blend air temperature door getting stuck. It’s controlled by a small electric motor. (The other doors may be vacuum controlled, but this one is electric.)
