OP is not up on engine terminology, she got valve cover gaskets confused with head gaskets. As far as I know the head or heads have never been off.
A little too much terminology confusion to really get a grip on what’s going on. The number of part changes reported could just be because different shops were presented the vehicle. Not sure why a piston change is being recommended or what that will fix. Does she mean a ring job? At the end of the day the OP failed to check oil in an engine known to lose it. I’m not sure there is that much wrong with the engine other than some premature wear due to oil starvation. You can buy a lot of oil for $3500, maybe even a used engine.
