Good advice. I will replace them too. I used to buy the rebuild kits and polish the insides and do it that way, but I don’t think they sell the rebuilt kits any more.
Good idea. The cylinders aren’t that expensive, not worth messing with a rebuild kit.
people update/modify their cars to suit what they need out of it, A '57 Chevy with Disc brakes and other updates may not be original but if the goal is a reliable cruiser that still looks mostly stock with the possible exception of modern wheels I have no problem with that.

Are you absolutely sure that none of the shoes are contaminated?
You may want to consider the possibility that one or more of your drums are out-of-round . . .
If you get those drums in tip-top shape, perhaps all will be satisfactory again . . .
