Theres not much resistance in the pedal and it is drinking fluid but I cannot seem to find any evidence of leakage. Am I missing something?

If you have done (or had done) a comprehensive brake inspection, the fluid could be leaking past the rear seal of the master cylinder into the booster and being consumed by your engine. This is not good for your booster or your engine, but I somewhat doubt this is your problem. These type of failures are somewhat rare. I think you are just missing something, perhaps a blown wheel cylinder. These are common and easily missed by a simple once over, looking for brake fluid leaks under the vehicle and not inspecting the friction material. I suggest removing your rear drums and checking that out. You will probably find your missing brake fluid behind one or both of your brake drums, all over the place.
