Going down the road the heat gauge goes over to hot and ac shuts down. Car is not overheating or low on coolant.
I beg to differ, the gauge says it IS overheating. How do you know it is not?

What makes you think it’s not overheating? If you feel pretty confident in this put a new coolant temperature sensor in there and see if it helps.
