Likely because it has a problem with it evaporative vapor capture system. Or the car is leaking gasoline.
Is there a yellow light glowing on the dash? You really should take it into a mechanic and tell them about the odor and when it occurs. Don’t park it in the garage until this is fixed, just to be safe.
its most likely a loose or split gas hose or a loose line connection if it has all steel lines it also may be a ruptures O ring on the fuel interjection .
