I’m looking at a 89 ford F-150 the girl says it has 68000 miles how do I know if it really is 168000 ?
You don’t know unless there is an extra digit. Even then, on an 89, it is likely to have been rolled back because I think it still uses a mechanical odometer.
If you are looking at this truck like a low miles, daily driver, forget it. The age of the parts is far more of an issue than the odometer mileage.

By looking at the service records. If there aren’t any, you’re buying an end of life vehicle anyway.
Look at how worn the brake pedal is.
