I have doubts that whoever checked the FUEL pressure knew what they were doing. There should be no need to race the engine on a lift in gear.

You need to measure the fuel pressure while accelerating when the problem occurs, free wheeling on the lift proves nothing.

When I suspected a fuel pressure issue, I connected the fuel tester and taped it to the windshield so I could read the pressure while I was driving. Just have to have a long enough hose on the tester.
Have u done a compression test? Leak down test? U might be putting lipstick on a pig.
Any luck on this? I’ve got the same thing going on with my 94 and have replaced just as many parts with no results.
