Safe is relative. You have already modified the car with coil-overs and with a radically lower ride height, you have already compromised safety. Possibly by quite a lot. And depending on where you live, you will get the attention of local law enforcement.
Leaving off the front swaybar might is not a smart thing to do as the car may oversteer - rear slides wide - without it. Or it might not. Without lots more information, it is impossible to tell. Leaving off the rear stabilizer would create less problems.
So basically, I don’t recommend it. I also recommend you make friends with someone who knows more about this than you do so you don’t hurt yourself or others driving around you.
