cold weather overheating
On possibility, if coolant was too dilute with water thereby raising the freezing point, coolant could have frozen and not circulated through the engine. Don’t ask how I know this…lol

That’s my guess, too! Your anti-freeze wasn’t a high enough concentration to prevent freezing, so it froze up. You might now have a leak when it thaws out - a big one.
