A/C will cut off , you have to mess with controls to get it back on
Not enough info to be able to guess. It’s 20 years old so it could be a glitch in the controls OR it could be a low refrigerant problem/pressure switch with the dash controls being a coincidence.
If it were me I would want to know what the system pressures are (both static and in operation with compressor engaged at say 1800 RPMs) as a first step before replacing parts and disassembling things.
