Even when your car is beyond warranty it makes sense to not exceed the schedule for time as outlined in the owner’s manual. When it’s still under warranty it makes sense to also keep all the servicing records.
I just bought Mobil 1 and an OEM filter for my Acura and it cost me $50. I change at 5000 miles which is about 50% on the oil condition monitor. That’s one cent per mile. Would it be worth it to me to save $25 to go an extra 2500 miles? No. Not for me. I don’t stretch oil changes.
