Adding further N2 will add just that gas in whatever purity it is… like stuffing a pillow into a pillow case, by adding more mass, you increase the tension (pressure is force per unit area) on the tire and give the flexible object rigidity.

So you will have the original volume of air at a pressure of 1 atmosphere (14.7 psi) and then you will add enough new gas that is enriched in Nitrogen to bring the pressure up to what your manufacturer recommends on the door panel. You are right, it will not be pure nitrogen and they will not draw a vacuum on the tire prior to filling it. So in the end you may end up with 90% ? nitrogen by volume.
