What’re the best sources for OM Mercedes parts, particularly interior wood and carpets  
  
 for 1984 300 coupe?

Besides the dealer? (they have access to lots of parts, much more than many other brands). Google Mercedes OEM parts.

Sure…the other thing I would do is join some of the Mercedes-specific discussion forums, google Mercedes forum, there’s lots.
