One other note: the prices you mentioned, I suspect the $1200-2000 was just for the timining belt replacement along with recommended associated maintenance-water pump, tensioner etc. the $3000-6000 is for repair/replacement of the damage to the engine.

I don’t think the 3.5L is really that terrible of an engine as Chryslers go. Others are far worse.
Yes, if you do a timing belt on ANY care, especially one with an interference engine, replace anything that touches or is associated with the belt. This includes cam/crank seals, water pump, idlers, tensioner, etc. Once you are in there the hard part is done and a few extra parts a minutes extra labor won’t amount to anything compared to having to go back in to replace a $5 part later.
